Marty’s Smoke Shack Hopes to Open in New Hope Next Month

For those loyal barbecue fans who are still mourning the loss of Bitter Bob’s restaurant at 110 S. Main St. in New Hope, the wait for smokey, succulent meats may be over.

Martin Hadicke (Fabulous Fest Catering in Stockton, N.J.) and Louis Zanias (Karla’s, Zubi, and Nina’s in New Hope/Doylestown) are joining forces to create Marty’s Smoke Shack, a new barbecue/comfort food destination that they hope to open in March.

“We’re going to try to please a lot of different tastes,” said Hadicke, who was born and raised in Solebury Township, and even worked for Johnny Francis at the Canal House in 1978-79.

“You learned a lot, quick,” recalls Hadicke, laughing.

The menu will be diverse, but at its core will lie the meaty trinity of brisket, ribs and pulled pork. The brisket will be prepared Texas style, according to Hadicke, while ribs will be served in more of a Memphis-style sauce, with its characteristic smokey-sweet tomato base.

The pork “will be pulled to order, and the customer chooses which sauce,” he said. Sauces include chipotle, ancho, mole, Kansas City, mustard, and the aforementioned Memphis-style.

Aside from BBQ, Marty’s Smoke Shack will feature comfort foods like mac ‘n’ cheese, burgers, and lots of salads and vegetarian choices. A breakfast offering on weekends is planned, harkening back to the restaurant’s prior life as Cafe LuLu (formerly run by Zanias).

Job seekers: Marty’s is currently on the lookout for staff.
